This was a creation I made one morning when I didn’t know what to have for breakfast. I had these things floating about, so I decided to make them into something.
Coat pan in olive oil or cooking spray.
Saute mushrooms and garlic until cooked.
Add eggs to the pan with mushrooms and garlic, and cook until eggs are almost cooked. Then add as much cotija cheese as you would like. Season with salt and pepper, to taste.
You can cook the chilies in with the mushrooms or add as a topping.
Garnish with salsa and sour cream (optional).
