This pie comes together easily for Christmas morning, and the red and green peppers give it a festive look.
1. Cook onion and sausage in a skillet until sausage is fully cooked.
2. Drain sausage and mix in cheese.
3. Place half of the mixture in each frozen pastry crust.
4. Combine peppers in a bowl. Sprinkle half of the mixture evenly over each pie.
5. Combine eggs and milk together. Pour half of the mixture over each pie.
6. Bake at 350 degrees F for 55-60 minutes or until a knife inserted near the center comes out clean.
7. Let stand for 5 minutes before cutting.

We did tweak the recipe a bit, but thank you ‘realmomkitchen’ for posting this – it is delicious and so easy to make and the family says it’s keeper! Like ‘shinnycook’, I also cooked the sausage and onion the night before. Christmas morning, we mixed up the rest of the ingredients, plus chopped green chilies and chipotle peppers in adobe sauce….oh my goodnes it was good.
I’ll be making this pie again for supper very soon!!

I made these for Christmas morning and they turned out great! I fried the sausage with onions the night before, added the cheese and put it in the fridge (steps 1 & 2). The next morning I assembled the pies. Thanks for the recipe.

We don’t eat pork, so I made this with turkey ham. Still great — not heavy like some breakfast casseroles.
