Description

Another recipe that came out of a chili lime kick I was on: delicious potatoes that can go in a hearty breakfast burrito!

Ingredients

  • 3 whole Potatoes (I Used 2 Russets And 1 Sweet Potato), Peeled And Diced
  • 3 Tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Garlic Powder
  • 1 Tablespoon Chili Powder
  • 2 Tablespoons Lime Juice
  • 6 whole Burrito Sized Tortillas

Preparation

Preheat oven to 425ºF. Put diced potatoes on a baking sheet and drizzle generously with olive oil. Sprinkle with salt, garlic powder, chili powder, and lime juice. Toss potatoes to coat evenly. Roast for about 15-20 minutes, or until tender and a little crispy.

Put in a burrito-sized tortilla and top with some eggs, cheese, and favorite salsa. These would be great with some sausage also, for those that need to put some meat in there!

I mostly tasted the lime flavor so I think I will increase the seasonings next time.

Wow – so delicious! I used 2 sweet potatoes and a handful of purple potatoes. Along with the eggs, I used a spicy cheese. Next time I would add avocado to add a little creaminess.
