The blend of flavors and hints of savory/sweet are an amazing way to begin your day.
In a skillet over medium heat, lightly pan fry sausage and apples.
Begin assembling everything as they brown. Place toasted English muffin open faced onto a plate while still hot. Divide spinach over each half of muffin and immediately cover with one Swiss cheese on each half of muffin. Allow the spinach a few moments to wilt from the heat of the muffins. When sausage and apples have browned, divide sausage across the top of the cheese, followed by apples on top of the sausage. Cheese will blissfully melt from the heat of the sausage/apples. Top each muffin half with a poached egg and season with salt and pepper. Enjoy!
