One of my favorite breakfast sandwiches. A Canadian bacon, egg, and cheese sandwich. The flavor combination is a real competitor to a peanut butter and jelly sandwich.
Begin by warming a large skillet, spraying with just a bit of cooking spray. Cook your slices of Canadian bacon, for approximately 2-3 minutes per side. During this time, melt the butter in a smaller skillet. Carefully crack your egg and cook until the white of the egg firms up a bit, but the center is just lightly loose. Carefully flip over with a spatula, season with a bit of salt and pepper, then lay the American cheese on top.
Toast your bread.
Lay a piece of toast down, top with the egg and cheese, and top with the warm Canadian bacon. Top with the other piece of toast. Gently press down, releasing some of the yolk as it is great for dipping. Dig in and enjoy.
