Looking for a creamy, cheesy, healthy egg dish? Try this little Frittata: just throw everything together and bake. It’s my favorite baked egg of all time!
Preheat oven to 350ºF. Spray a 10-ounce oven safe dish with cooking spray.
Add butternut squash to the dish.
In a measuring cup, add eggs and milk. Mix until combined. Pour over butternut squash.
Sprinkle with pepper and top with cheese.
Bake in oven for 30–35 minutes, until middle is slightly firm but still a little jiggly.
Let it cool for a few minutes.
