These Breakfast Sliders are a healthy alternative to the usual dairy and carb filled version, with only four ingredients needed!
Heat oven to 425ºF.
Peel, wash and slice sweet potato into slices (about 1/4 inch). Assemble slices on a baking sheet lined with parchment paper. Season slices with salt, pepper and olive oil. Cook slices in oven for about 20 minutes.
While sweet potatoes are in the oven, cook bacon and scramble eggs. Cut and peel avocado, then slice into smaller pieces, small enough to place on top of sweet potato slices.
Remove sweet potato slices from oven, allow to rest for a few minutes .Cut bacon slices in half, then place on top of sweet potato slices. Layer scrambled eggs, then close with additional sweet potato slice. Top off with a slice of avocado.
Pierce a toothpick through each slider to ensure stability.
