A new twist on a snack classic!
Crack eggs into a small bowl and add chipotle sauce, milk, salt and pepper. Whisk and set aside.
Heat a skillet on medium heat. Spray pan with non-stick spray. Add the eggs mixture. Scramble until just set. Do not cook them until over done.
Set the tortillas on your work surface. Divide eggs onto one half of each tortilla. Top eggs with avocado, cilantro, bacon, and cheese. Gently fold over the other half of each tortilla.
Wipe out the frying pan. Spray again with non-stick spray and heat up again over medium heat. Gently lay each folded over tortilla into the non-stick frying pan. Once the tortilla has started to turn golden brown on the first side, use a spatula to flip the tortillas over. Brown on the other side. Remove from the frying pan and plate.
Top with sour cream or Mexican crema and salsa. Devour.
