This casserole is easy to put together and can be made ahead. It’s ideal to feed a crowd or for batch cooking.
Preheat oven to 350ºF (180ºC).
Dice sweet potato and place in a 12 x 7 1/3-inch (30.5 x 19 cm) glass baking dish with a tablespoon of extra virgin olive oil. Bake at 350ºF (180ºC) for about 30 minutes.
Fry diced bacon in a large sauté pan over medium-high heat for about 5 minutes. Add onion and garlic, and stir. Add the green and red peppers and stir.
Add ground meat, stir and break up the meat into small pieces. Add salt, pepper and herbes de Provençe. Continue cooking for about 10 minutes, stirring occasionally until te meat is cooked.
In a medium-size bowl, whisk eggs.
Once sweet potatoes are soft, add meat mixture and whisked eggs. Stir well. Distribute mixture evenly in the baking dish and bake for about 15 to 20 minutes.
