This is one of those perfect fill-me-up-quick-with-little-fuss breakfasts. And, it looks cute. ‘Nuff said.
Melt 1 tablespoon butter in a nonstick skillet over medium heat. Place shredded potato on top of the butter (arranging with a hole in the middle, like a nest) and cook for 4-5 minutes. Place egg inside the hole and cook for another 3-5 minutes. Melt the remaining 1 tablespoon butter on the skillet, and flip the nest over on top. Cook for another 5 minutes or until egg is set and potatoes are cooked through.
Dig in!
