Great egg dish for breakfast or brunch. Travels well, so is great for showers or work breakfasts. Can be prepared ahead and baked in the morning.
Crack eggs into a large bowl and beat. Add the container of sour cream and beat again until sour cream is combined. Add mustard, parsley and salt and pepper to taste. Stir until combined. Add ham, cheese and hash browns, stirring until everything is well mixed and the potatoes are coated with the egg mixture. Pour into a greased 9×13 pan. Bake uncovered at 375F for 30-45 minutes or until eggs look done.
You can change the ingredients to your tastes. Think of it like an omelet and add any variation of meat/vegetables/cheese that you like.

My husband needed a breakfast item to bring to work with him so I made this! Everyone loved it! His attending MD even said “To say this is superb would be an understatement!” I’m glad I went with this recipe Thanks!
