Description

I created this savory frittata to honor Maria and Josh of Two Peas and Their Pod at their virtual baby shower. Frittatas are perfect for breakfast, brunches, the lunch box and of course baby showers!

Ingredients

  • 4 whole Large Organic Eggs
  • ½ cups Egg Whites
  • ½ cups Fat Free Milk
  • ¼ cups Grated Cheddar Cheese, Parmesan Or Your Favorite Cheese
  • 1 whole Leek, Cleaned, Trimmed And Chopped Into Small Pieces
  • 2 whole Garlic Cloves, Diced
  • 1 Tablespoon Olive Oil
  • ½ cups Baby Peas (I Used Frozen, Thawed)
  • 1 pinch Fine Sea Salt
  • 1 pinch Ground Black Pepper

Preparation

Preheat your oven on broil with the oven rack in the middle of the oven.

Whisk together eggs, milk and 1 ounce of the cheese in a bowl. Set aside.

In a 12 inch oven safe fry pan sauté the leeks and garlic with olive oil over medium high heat until softened and slightly browned. Add peas, and some salt and pepper to taste. Stir and heat for another minute or so. Then add egg mixture to the pan. Tilt the pan and make sure the egg distributes evenly around the pan. Also nudge the pea mixture around if needed to make sure it covers the bottom of the pan.

Cook for about 5 minutes or until the frittata starts to pull away from the edges of the pan. Then top with the remaining cheese and broil for about 2-3 minutes or until cheese is melted and slightly browned. Watch carefully so it does not burn.

Optional ingredients:
Sunflower seed sprouts
Micro greens
Tabasco or your favorite hot sauce
