This is another recipe born of refrigerator leftovers. It comes together very quickly for a hearty breakfast scramble, and has perfect LCHF/Keto macros. Suitable for Atkins, keto, lchf, low carb, diabetic, low glycemic, gluten free.
Cut the spam into about 1/2-inch cubes. Melt the butter in a medium frying pan on medium heat, and toss in the cubed spam.
While the Spam browns, slice the onion, and chop the asparagus. Add them to the skillet and stir everything up. Sauté until the onions have started to brown and the Spam has crisped up.
While the skillet mixture is browning, mix the eggs and cream in a small bowl. Once the onions and Spam have browned, add the egg mixture and stir everything together. Let it cook until the eggs begin to set, and flip over in sections to cook the other side. Turn off the heat as soon as you flip the scramble to cook the other side.
Serve on plates and sprinkle each with a tablespoon of shredded cheese. Add salt and pepper to taste.
Tip: Substitute any leftover low carb veggies for the asparagus. It won’t make a negligible difference in the net carbs.
