Description

Chewy, delicious peanut buttery granola bars with chocolate chips in every bite. The perfect portable snack for busy people and hungry kids!

Ingredients

  • 2 cups Crispy Rice Cereal
  • 1-½ cup Quick Cooking Oats
  • ½ cups Light Brown Sugar
  • ½ cups Honey
  • ½ cups Peanut Butter, Smooth Or Crunchy
  • 1 teaspoon Vanilla Extract
  • ¼ cups Miniature Chocolate Chips

Preparation

1. In a large bowl, combine the crispy rice cereal and the quick-cooking oats. Set aside. Place the brown sugar and honey in a small saucepan over medium heat. Bring to a boil, then reduce heat to a simmer and cook for 2 minutes. Remove from the heat and add the peanut butter and vanilla extract. Stir until the mixture is smooth.

2. Pour the peanut butter mixture over the dry ingredients and stir until everything is evenly coated. Thoroughly spray and coat a 9×13 pan with cooking spray and pour the granola bar mixture into the pan. Press the granola bar mixture into an even layer and press the mixture up against the sides of the pan, until the bars are about 3/4 of an inch in thickness.

3. Sprinkle with the mini chocolate chips and press them in lightly. Let it cool on the counter at room temperature before cutting. This will take about 2 hours. Wrap the bars in plastic wrap, and store at room temperature. Enjoy!

Note: These granola bars are extremely customizable, so feel free to throw in some dried fruit or roasted peanuts and customize away!
