Besides being a healthy energy boosting breakfast, this citrus beet coconut overnight oats also saves you time, due to its minimal preparation time the night before.
Blend coconut milk, lemon juice, beet, grapefruit, chia seeds, protein powder, and stevia powder in a high-speed blender until very smooth.
Add oats into a large jar and pour the smoothie base into a large jar. Stir briefly to mix. Cover the jar with lid and let it stand in refrigerator overnight.
Garnish with fruits and sprinkle with coconut flakes and additional oats if desired. Serve cold.
