Description

A delicious way to start or finish the day. It’s not overly sweet.

Ingredients

  • FOR THE COFFEE CAKE:
  • ¾ cups Butter, Softened
  • 1 cup Sugar
  • ½ cups Packed Brown Sugar
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 teaspoon Cinnamon
  • 1 teaspoon Vanilla Extract
  • 2 whole Eggs
  • 2 cups All-purpose Flour
  • 1 cup Nonfat Plain Greek Yogurt

  • FOR THE TOPPING:
  • ¾ cups Packed Brown Sugar
  • ¾ cups Walnuts Or Pecans, Chopped
  • 1 Tablespoon Cinnamon

Preparation

Preheat oven to 350ºF and lightly grease a 9×13″ pan.

In a large bowl, beat the butter, sugar, brown sugar. baking powder, baking soda, salt, cinnamon, and vanilla until fluffy. Beat in eggs, one at a time, until well-combined. Alternate additions of flour and yogurt and beat well after each addition.

Spoon batter into the pan (it will be fairly thick) and smooth the top.

In a small bowl, combine the topping ingredients. Sprinkle evenly over the batter.

Bake 30–35 minutes until crust is dark, golden brown and crispy.

Oh my goodness! This recipe was AMAZING! It was so easy to make and thank you so much for stating that the batter would be on the thick side! I honestly can say that this coffee cake recipe is BETTER than Starbucks!

great coffee cake recipe. i had regular yogurt on hand so I used that and it turned out great. next time i make it I’ll probably change up the topping a bit – i only used 1/2 c. brown sugar and I thought it was plenty.
