A yummy Mexican breakfast taco.
Remove casings from chorizo and cook in a medium size pan over medium heat for about 6 minutes.
Add in eggs and scramble around using a spatula so it is mixed well with chorizo. Cook for about 2 minutes, or until chorizo and egg are fully cooked.
Warm tortillas. I warm mine on the stove over medium heat: I take two tortillas and put them on a pan, and when they start to toast lightly, I flip them and toast the other side.
Assemble tacos by putting the egg-chorizo mixture in the tortillas. Serve with cheese, salsa, potatoes, or whatever you would like!
