If you love spiced chai, this is the breakfast for you. There are hints of vanilla throughout. I used quinoa bread from Trader Joe’s for extra protein, but whole wheat will do!
1. In a shallow bowl whisk together the eggs, milk, sugar, vanilla, cinnamon, cardamom and salt.
2. Melt two or three pats of butter in a skillet over medium high heat, using enough to coat the surface of the griddle.
3. Gently dip each slice of bread into the egg mixture. Place on skillet and cook for 2-4 minutes per side or until golden brown. Remove from skillet and finish cooking the rest of the bread if they didn’t all fit into the skillet the first time.
4. Serve immediately, with a sprinkle of powdered sugar for decoration and maple syrup to taste!
