Broiled Vanilla Grapefruit

Description

A favorite from my childhood, I’ve enjoyed this for breakfast for more years than I’d like to admit. Simple and delicious!

Ingredients

  • FOR THE VANILLA BROWN SUGAR:
  • 1 cup Brown Sugar, Light Or Dark Is Fine
  • 1 whole Vanilla Bean
  • FOR THE GRAPEFRUIT:
  • 1 whole Grapefruit
  • 2 Tablespoons Vanilla Brown Sugar

Preparation

For the vanilla brown sugar:
Place one cup of brown sugar in a jar and add the vanilla bean. Seal the jar. Refrigerate for five days and shake the jar at least once a day. After five days discard the vanilla bean.

To prepare the grapefruit:
Slice a grapefruit in half. You can use any variety you like, but I prefer the pink or red which are sweeter than white.

Slice a sliver of the peel off the bottom of both halves to create a flat surface for the grapefruit to stand on. Be careful not to cut into the fruit.

Use a paring knife to carefully separate each grapefruit segment and run the knife around the inner edge of the skin as well, between the fruit and the peel.

Put each grapefruit half onto a baking sheet. Sprinkle one tablespoon (or more if you’d like) of vanilla brown sugar over each half.

Turn on the broiler. When it’s hot put the tray on the middle rack in the oven. Broil 2-4 minutes, or until vanilla brown sugar is melted and the tops are just beginning to get dark.

Note: This is also great topped with a dollop of yogurt, and can be topped with ice cream as a dessert.
