This recipe includes my all-time favorite ingredient: El Pato Salsa de Jalapeno. Love it! Actually their Hot Tomato Sauce is also good..as is their Salsa de Chile Fresco. Use your favorite salsa if you can’t find El Pato’s!
Start by cooking bacon in a large frying pan over medium high heat until crispy. Drain bacon grease, leaving a small amount in the pan.
Add to the cooked bacon the onion, bell pepper(s), and corn tortillas. Continue to cook over medium high heat until the corn tortillas begin to brown.
In a medium size bowl mix the eggs, whole milk, and El Pato Salsa de Jalapeno (or your favorite salsa).
Pour the egg mixture over the bacon/vegetable/tortilla mixture and cook over medium low heat, stirring occasionally, until the eggs are set.
Once the eggs are set, spoon the mixture into the warmed flour tortillas. Top with the grated cheese, and more hot sauce (I like Cholula Hot Sauce, the Surfer likes Tapatio Hot Sauce…it’s a personal thing in our family!), roll ‘er up, and enjoy!
