Break your fast with yummy bagels, eggs and cheese.
Scrambled eggs: Place two teaspoons of butter into a small fry pan. Set the pan on your stove at medium low heat. While your pan is heating up, whisk your eggs and milk until the eggs are frothy and completely mixed together. When the butter is melted, pour your eggs into the pan and stir gently.
As your eggs are cooking, toast your bagel slices. (I use a toaster oven.)
When the eggs reach the consistency that you like (I like ‘firmer’ scrambled eggs), remove the pan from the heat.
Butter your bagel slices and spoon the scrambled egg evenly over them. Sprinkle the cheese over the egg. (I like a lot of cheese on this and have even been known to use cheese slices when I run out of my grated cheese.)
Place the bagels back into the toaster oven (or microwave if you used a regular stand toaster for your bagel) until the cheese melts. (To serve larger gatherings, just use your oven and a cookie sheet to toast the bagels and melt the cheese.) Enjoy!
