Vegan and gluten free, you can feel great about eating this hearty breakfast!
Preheat oven to 350ºF and spray ramekins with nonstick spray.
In a medium bowl, combine dry ingredients (oats, coconut sugar, cinnamon, chia seeds, baking powder, salt). In another larger bowl, mash the banana, and add the rest of the wet ingredients (flax egg, vanilla, almond milk).
Pour the dry ingredients into the wet bowl and stir to combine. Lastly, add the blueberries and any other add-ins you might want (I recommend chocolate!).
Evenly distribute the mixture into ramekins. Bake for about 35-40 minutes, or until all the milk is set and an inserted toothpick comes out clean.
