Creamy, garlicky sausage gravy over fresh fluffy biscuits is just what my guys needed for an early mornin’ Seahawks playoff game. They were happy with the food, not so happy with the outcome of the game!
Bake biscuits according to package instructions or your favorite recipe. I used Pillsbury just to make it easy, but you can make your own, or buy them from a bakery if you’d like.
Cook the sausage and diced onions in a skillet on medium heat, breaking sausage into small pieces as it cooks. Once the sausage is browned and cooked through, add in 1/4 cup flour, and a little olive oil if there wasn’t much grease from the sausage. (Hey, no one said this was healthy!) Stir well to coat the sausage mixture in the flour and oil. Brown on medium heat for 10-15 minutes, stirring every couple minutes.
Once the sausage is well browned and crispy, add in the minced garlic and cook for 1-2 minutes, stirring constantly so you do not burn the garlic.
Then, slowly add in the milk, 1/4 cup at a time, stirring constantly. Continue stirring and adding in milk every couple of minutes until the gravy comes to just a little thinner than your preferred gravy consistency. It will continue to thicken as it cooks. (We all know what consistency gravy should be, right?)
Add in the Worcestershire sauce, sage, oregano, rosemary, salt and pepper and stir well. Let this cook on medium-low heat for 15-20 minutes, adding in a little more milk occasionally as needed.
Serve over hot biscuits with your favorite breakfast fixings; eggs, bacon, fresh fruit, coffee with Kahlua and/or Irish Cream, Bloody Mary’s and Man-Mosas (just like a Mimosa, only served in a pint glass, so they don’t feel so dainty!)
