Traditional Louisiana coffee accompaniment. Basically doughnuts with powdered sugar on top!
In a saucepan boil water, butter, granulated sugar, and salt. Reduce heat to low and whisk in flour.
Allow dough to cook for about 2 minutes, stirring constantly, until dough is thoroughly combined. Remove from heat.
Beat in each egg one at a time until dough is light and fluffy. Add vanilla.
In a deep fryer or deep straight sided pan, heat 2-3 inches of shortening or oil to 370 degrees for frying. Use two teaspoons to scoop small balls of dough into the oil, cooking 2-3 minutes until golden brown, turning midway through.
Use slotted spoon and transfer to paper towels to cool. Sprinkle with confectioners sugar and serve hot. Preferably with chicory coffee!
