Description

This is a very good way to enjoy oatmeal for breakfast, and use up an overripe banana. You can omit the nuts, but buying a bag of walnuts from Sam’s or Costco and keeping them in the fridge for up to one year makes adding walnuts reasonable.

Ingredients

  • 1 cup Quick Oatmeal
  • 3 Tablespoons Chopped Walnuts
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Sea Salt
  • 3 Tablespoons Nonfat Dry Milk Powder
  • 3 Tablespoons Sugar, Divided
  • 1 whole Large Egg
  • ⅔ cups Water
  • 1 whole Ripe Banana, Mashed

Preparation

Preheat oven to 375°F.

Generously grease an 11×7 shallow baking pan, or similar size pan.

Mix the dry oatmeal, chopped walnuts, baking powder, salt, dry milk, 2 tablespoons of the sugar. Add the egg, water, and mashed banana; stir well to combine. Pour into the prepared pan, sprinkle the top with the remaining 1 tablespoon of sugar.

Bake 25 minutes, remove the pan from the oven. Let cool 5 minutes. Cut into 6 pieces.

To serve, put one serving of banana nut baked oatmeal into a bowl, top with 1/3 cup chilled (you can use reconstituted) milk. Enjoy a healthy, tasty breakfast.

Note: this baked oatmeal can be chilled, then frozen. Just thaw and heat for a fast and easy breakfast.
