Description

This banana berry oatmeal cake with a vanilla glaze is quick and easy to whip up, and makes a fantastic breakfast or a healthy snack!

Ingredients

  • 1 cup Old Fashioned Rolled Oats
  • 1-½ cup Whole Wheat Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • ¼ teaspoons Salt
  • 1 cup Raspberries (frozen And Unthawed, Or Fresh)
  • 2 whole Bananas
  • ¼ cups Brown Sugar (lightly Packed)
  • 1 whole Large Egg
  • 1 teaspoon Vanilla
  • ¼ cups Milk
  • FOR THE GLAZE:
  • 1 Tablespoon Butter
  • ½ cups Powdered Sugar
  • ½ teaspoons Vanilla
  • ½ Tablespoons Milk (up To 1 Tablespoon)

Preparation

Preheat oven to 350ºF. Lightly spray a 9-inch circle cake pan, or an 8×8 inch baking dish with nonstick spray, and set aside.

In a large bowl, whisk together oats, flour, baking powder, cinnamon and salt. Add raspberries and toss to coat them in the flour mixture. In another bowl, mash bananas and whisk together with brown sugar, egg, vanilla and milk, until smooth. Add this mixture to the dry ingredients and stir to combine.

Spread batter in the prepared baking dish and bake for 30–35 minutes or until the edges are golden and a toothpick inserted in the center comes out clean. Allow to cool for 5–10 minutes.

Meanwhile, prepare the glaze. Melt butter in a small saucepan over medium heat and whisk in powdered sugar. Remove from the heat and whisk in the vanilla and milk until smooth. Drizzle the glaze over the cake and serve warm.
