Served hot, it’s like a slice of pumpkin pie. Cold? You’d swear you were eating pumpkin bread pudding. Either way it’s delicious, healthy and easy to become addicted to, says the woman who ate it every day for 3 weeks straight!
Preheat oven to 350ºF.
In a large bowl, mix all ingredients except oats until smooth.
Stir in oats and mix until totally combined.
Pour mixture into a greased 8×8 pan. Cover with foil and bake for 30 minutes, then remove foil and bake for additional 15 minutes.
Makes 6-8 servings.

I was looking for something to make with the half can of puree I had leftover from another recipe — this will be perfect! I already have those things on hand!
