Description

A healthy and satisfying way to start your morning.

Ingredients

  • ½ cups Rolled Oats
  • 3 Tablespoons Chopped Pecans, Divided Use
  • ¼ teaspoons Baking Powder
  • ¼ teaspoons Cinnamon
  • 1 pinch Salt
  • 2 Tablespoons Maple Syrup
  • ½ cups Almond Milk
  • 1 whole Egg White
  • ½ teaspoons Pure Vanilla Extract
  • 1 Tablespoon Olive Oil
  • 1 whole Large Banana (or 2 Small Bananas)
  • ⅓ cups Blueberries

Preparation

Preheat the oven to 375 F. Lightly grease 2 individual-sized oven-safe dishes. Set aside until needed.

In a medium bowl, whisk together the rolled oats, 2 tablespoons of chopped pecans, baking powder, cinnamon and salt. Set aside.

In a small bowl, whisk together the maple syrup, almond milk, egg white, vanilla and olive oil.

Place the sliced bananas on the bottom of each prepared dish. Evenly divide the rolled oats mixture between each dish. Pour half of the liquid mixture over one dish and pour the remaining liquid over the other dish. Sprinkle the remaining 1 tablespoon of chopped pecans and the blueberries on top of each dish.

Place the dishes on a baking sheet and bake until the oatmeal has set, about 30 minutes. Then remove from the oven. Allow the oatmeal to cool for 5 minutes after removing from the oven. Serve and enjoy!

*This recipe can be easily doubled or tripled to make more. If you do this, you can bake it in a larger casserole dish.
