Baked Banana Berry Oatmeal Cups make oatmeal for breakfast portable and delicious.
Preheat oven to 375ºF.
Mash bananas, then whisk in egg, honey, cinnamon and pinch of salt. Using a rubber spatula, fold in berries, nuts, and oats.
Spray muffin cups with coconut oil cooking spray then scoop the oatmeal mixture into each of the muffin cups. Bake for 15 minutes or until set.
Store leftovers in the fridge and reheat as needed. Serve Greek yogurt alongside for a nutritious breakfast.
