Description

Wanted to make something comforting, so why not a bacon, egg and cheese strata! I have made stratas in the past and they are always a winner. Stratas are so simple to make. You can even prepare them the night before, and pop them in your refrigerator to bake in the morning. Mine however will be baked as soon as I am done preparing it. Here’s what you’ll need.

Ingredients

  • 6 slices Bacon
  • 1 cup Onion, Chopped
  • 1 Tablespoon Butter
  • 1 Tablespoon Olive Oil
  • 2 cups Broccoli Florets, Chopped
  • 1 dash Salt And Pepper
  • 1 pinch Nutmeg
  • 5 whole Eggs
  • 2 cups Milk
  • 1 cup Ore-Ida Tater Tots
  • 2 cups Cheddar Cheese, Shredded
  • 6 cups Italian Bread Cubes

Preparation

In a frying pan over medium heat, cook 6 slices of bacon until crisp. Lay them on a plate lined with paper towel. Drain grease.

In the same pan, over medium-low heat, sauté your onions in the butter and olive oil. Cook on medium-low for a few minutes until they soften. Add your broccoli to the same pan and cook for 5 minutes until softened. Season with salt, pepper and nutmeg.

In a large bowl beat your eggs, then mix in your milk, potato tots and half of your cheddar cheese. Then mix the broccoli and onions.

Preheat oven to 350 F.

Into a buttered 9-inch square baking dish, layer your Italian bread pieces. Next pour entire egg and broccoli mixture over the bread, and lightly press down to allow bread to soak up all the milk. Sprinkle the rest of the cheddar cheese over the top then crumble the bacon and sprinkle that on top!

Bake at 350 F for approximately 35 minutes. When it’s slightly firm, it’s done! Top with sour cream for extra goodness.
