Having guests over early on a holiday morning? Need to feed hungry kiddos and/or spouse before they go out to storm a castle? Whip this up the night before and you’ll be able to relax the next day with a warm, rib-sticking, delicious meal. Bonus: it reheats well for snacks or lunch.
Preheat oven to 375 degrees (for a glass pan).
Dice the ham OR fry and crumble the bacon. Set aside for a little while. If you wanna get fancy, you could use pancetta.
In microwave, melt the butter in a 9×13 glass pan.
In a large bowl, beat the eggs slightly. Add the baking powder to the flour and blend. Add both to the egg mixture. Beat again. Then add meat, cottage cheese, chiles, and grated Jack cheese, mixing until just blended.
Pour this mixture into the pan and bake it for 30 minutes, or until slightly browned. Remove from the oven and – THIS IS THE MOST DIFFICULT PART – let it sit for about 5 minutes to make sure it’s set.
