Vanilla yogurt, cinnamon apples and a homemade streusel topping make for a sensational Autumn breakfast or snack.
Preheat oven to 350 F. In a microwave-safe bowl combine apples, cinnamon and half of the brown sugar. Microwave for two minutes or until apples are tender. Set to the side until cool.
Put the butter into a bowl. Cut flour and remaining half of the brown sugar into the butter. It should be crumbly. Mix in pecans and oats. Spread the mixture onto a foil-lined baking sheet. Bake at 350 F for 8 minutes or until oats are toasted. Remove from oven and set to the side.
Allow apple and oat mixture to cool. To assemble, divide apple mixture into two small bowls. Top each bowl with yogurt and oat mixture.
