Description

These Apple Banana Oat Muffins are made without refined sugars, but they’re also nutrient dense and full of fiber. The perfect guilt-free snack.

Ingredients

  • 2 cups Old Fashion Oats
  • ½ cups Chopped Walnuts
  • 2 Tablespoons Chia Seeds
  • 2 teaspoons Baking Powder
  • ¼ teaspoons Baking Soda
  • 2 whole Eggs
  • 1 whole Egg White
  • ¼ cups Vanilla Yogurt
  • ½ cups Apple Juice
  • 4 Tablespoons Coconut Oil
  • 1-½ teaspoon Ground Cinnamon
  • ½ teaspoons Vanilla Extract
  • ¼ cups Honey
  • 2 whole Apples
  • 2 whole Ripe Bananas

Preparation

Preheat oven to 350 F. Spray two 12-count standard size muffin pans with non-stick spray. You’re going to make 16 muffins total with this batter, so do 8 in one pan and 8 in the other for even baking.

Pulse oats in a food processor. Continue pulsing until the oats resemble a flour-like texture. Mix together the ground oats, walnuts, chia seeds, baking powder and baking soda in a bowl.

Beat the whole eggs and egg white in a separate bowl. Add the yogurt and apple juice. Stir to combine.

In a small saucepan over low heat, melt the coconut oil, cinnamon, vanilla extract and honey until it reaches a syrup-like consistency.

While that’s going on mash your bananas, and chop your apples into small pieces.

Add the egg mixture to the oat mixture and stir together. Next add in the coconut oil syrup, apples and bananas and mix well.

Pour the batter into muffin tins and bake for 25 minutes or until an inserted toothpick comes out clean. Remove from oven. Let them cool slightly before serving.
