10-Minute Apple Pie Breakfast Oatmeal.
Peel and chop the apples into 5mm cubes. Place them in a small saucepan with 1/2 cup of water and boil for 8 minutes over medium high heat until apples are tender and almost all the water has evaporated.
While the apples are cooking, place oats and remaining 1 1/2 cups water in a large microwave proof bowl and cook on high for 2 minutes. The oats should bubble right up towards the end of the cooking time and be light and fluffy.
Stir vanilla essence, cinnamon, then the apples into the oats. Spoon into bowls. Serve straight away, or store in an airtight container or jar overnight and heat in the microwave in the morning.
Note: Top these with Greek yoghurt and fresh fruit if you wish, or eat them as they are.
