Simple to whip up and make your house smell delicious! No one will know that they are healthy! Fool-proof and kid-approved!
Preheat oven to 350ºF. Line 12 muffin tins with paper liners and set aside.
In a small bowl, soak oats in milk and set aside. In a larger bowl, stir butter, sugar, banana, egg and vanilla together. Stir in flours until well incorporated. Slowly stir in oats, milk and chocolate chips until uniform in texture. Drop by tablespoonfuls into the prepared pan. Bake 15 minutes or so until a toothpick comes out clean when inserted.
Serve warm.
