Looking for a delicious, high fiber muffin to start your morning? These refrigerator bran muffins can be prepared ahead of time and simply baked in the morning. You can enjoy warm muffins on your way out the door.
Preheat oven to 400ºF. Pour boiling water over bran wheat flakes and all bran. Let cool to room temperature.
Meanwhile, in a medium bowl, whisk melted butter, eggs, and buttermilk. In a large bowl, whisk sugar, flour, salt, baking soda, and cinnamon.
Add wet ingredients to dry ingredients. Mix until well combined. Add bran mixture and stir until completely mixed through.
Grease a muffin pan and fill ⅔ full with batter. Cook for 20 minutes or until golden brown. Enjoy!
Note: Mixture can be stored in the refrigerator up to 1 week.
