This recipe is based on a recipe by Paula Deen.
First, make sure you have your sweet potatoes prepared. You can use leftovers, mash your own, or use the short-cut like I did and buy the packaged steam and mash potatoes in the freezer section of your grocery store (preparing them to bag directions).
Now, preheat your oven to 450 degrees F.
Sift together the flour, sugar, baking powder, and salt.
In a separate, large bowl mix together the sweet potatoes and butter.
Add the flour mixture to the potato mixture and mix to make a soft dough. Then add a tablespoon of milk at a time and continue to cut in.
Roll out the dough on a floured surface to 1/2 inch thick and cut with the rim of a glass or a biscuit cutter.
Place on a greased cookie sheet and brush the tops of the dough with melted butter.
Bake at 450F for about 15 minutes.
You can also serve them with honey butter which is simply 2 parts butter to one part honey blended together.
