Description

My family no longer desires store-bought rolls since I have perfected making these wonderful rolls. Using diastolic malt powder (available online or through King Arthur Flour) increases shelf life, texture, and aids in the yeast rising. These are both economical and relatively easy to accomplish.

Ingredients

  • 1-½ cup Water
  • 2 Tablespoons Canola Oil
  • 4 cups Bread Flour
  • 2 Tablespoons Granulated Sugar Or Honey
  • 1 teaspoon Sea Salt
  • 1-½ teaspoon Diastolic Malt Powder (optional)
  • 1 Tablespoon Instant Dry Yeast

Preparation

Add ingredients listed to your bread machine in the order recommended by the manufacturer. Select the DOUGH cycle and press START.

Once the cycle is complete, punch down the dough and transfer to a lightly floured surface. Cut into 12 equal-size pieces and form into balls.

Flatten the rolls slightly and place onto a lightly greased large sheet pan, spacing about 1 1/2 to 2 inches apart. Alternately, if you have a silicone mat, sprinkle it with some cornmeal before placing the rolls on the pan (I use this method).

When all rolls are placed, flatten them again slightly and use a sharp knife to cut an “X” in the top of each, if desired. Cover with a clean towel and let them rise until at least double in size. I really let them rise until they touch.

About 10 minutes before baking, preheat the oven to 375 degrees F. Place the rolls in the oven and bake for 18 to 20 minutes until nicely browned.

Remove from oven and let cool on the pan. Store in a bread container or large zip-top bags.

I’m surprised about the comment “too yeasty” … I’ve been making these for years and they are perfect. I use instant yeast in my bread machine and the only time they rise hitting the top is when I forget to pull the dough out of the machine at the end of the cycle; thus the dough continues to climb over the edges. I use a Zohirushi bread machine and even my neighbors proclaim that these are better than bakery store-bought rolls…even for burgers. Note: A pkt. of yeast is 2 1/4 tsp. while a tablespoon is 3 tsp., so it’s not that much more yeast.

These were relatively easy to prepare. When my dough cycle was complete the dough was practically bursting out of the machine from all the yeast. I think the dough texture would benefit from more kneading than a bread machine provides and they are a little too yeasty-tasting for our burgers. I may try again, but do some tweaking. Zina’s instructions are spot on, very easy to follow. Do flatten the rolls, they will rise up and not form the lovely rolls she has pictured.
