Description

Your favorite pizza is now a muffin!

Ingredients

  • FOR THE MUFFINS:
  • Cornmeal For The Muffin Tin
  • 2 cups All-purpose Flour
  • 2 Tablespoons Sugar
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • ½ teaspoons Dried Basil
  • ½ teaspoons Dried Oregano
  • 1 cup Freshly Grated Parmesan Cheese
  • 1 whole Egg, Beaten
  • ¼ cups Olive Oil
  • 1 cup Buttermilk
  • FOR THE FILLING:
  • ¼ cups Marinara Sauce
  • ¼ cups Shredded Mozzarella
  • FOR THE TOPPING:
  • ¾ cups Marinara Sauce
  • ¼ cups Freshly Grated Parmesan Cheese
  • Additional Pizza Toppings Of Your Choice (optional)

Preparation

Preheat oven to 375ºF.

Grease a standard muffin tin with butter or shortening. Sprinkle a small amount of cornmeal in each recess and shake to coat bottom and up the sides.

Mix the dry ingredients (flour, sugar, baking soda, salt, herbs) for the muffins together in a large bowl. Stir in parmesan cheese. In a separate bowl, mix the egg and the oil. Add the buttermilk and stir until combined. Make a well in the center of the dry ingredients and pour the wet ingredients into it. Mix together with a few swift strokes. Do not overmix.

Mix marinara sauce and mozzarella for filling.

In a separate bowl, mix marinara sauce and parmesan cheese for topping.

Divide half the batter among the muffin tins. Put one teaspoon of filling in the center of each muffin, then top with remaining batter. Put a scant tablespoon of topping mixture on the top of each muffin. Optionally, top with a small amount of your favorite pizza toppings such as chopped pepperoni, olives, mushrooms, peppers, etc. Additional cheese is not recommended as it burns easily.

Bake for 15-17 minutes or until golden.
