Description

These muffins are so moist and so full of bright citrus flavour!

Ingredients

  • FOR THE MUFFINS:
  • ½ cups Butter
  • ½ cups Granulated Sugar
  • 1 whole Egg
  • ¼ cups Milk
  • 1 teaspoon Vanilla
  • 1 cup All-purpose Flour
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Salt
  • 1 Tablespoon Fresh Grapefruit Zest
  • FOR THE GLAZE:
  • ½ cups Icing Sugar
  • 1 Tablespoon Fresh Grapefruit Zest
  • 2 Tablespoons Fresh Grapefruit Juice

Preparation

For the muffins:
Preheat your oven to 350ºF. Line a muffin tin with paper liners.

In the bowl of a stand mixer, cream the butter and sugar together until pale and creamy. Add the egg and mix well. Add the milk and vanilla and mix to combine.

In another bowl, combine the flour, baking powder, salt and grapefruit zest. Add the dry ingredients to the wet and mix until just combined.

Spoon the batter into the prepared pan.

Bake for 14-16 minutes or until they are lightly browned and a toothpick comes out clean. Cool completely on a wire rack.

Once they are cooled you can put on the glaze.

For the glaze:
Mix the icing sugar, grapefruit zest and grapefruit juice until completely combined. Pour over each muffin and let it set.
