Description

An easy recipe for a moist, delicious gluten-free Peanut Butter Banana Bread with Chocolate Chips.

Ingredients

  • 1 cup One To One Gluten Free Flour
  • 1 cup Oat Flour
  • ¾ teaspoons Baking Soda
  • ½ teaspoons Baking Powder
  • ½ teaspoons Salt
  • ½ teaspoons Cinnamon
  • 2  Eggs
  • ⅓ cups Coconut Sugar
  • 1-½ cup Ripe Bananas Soft, Darkly Speckled, Mashed Well (about 3 Medium)
  • ¼ cups Plain Yogurt
  • ⅓ cups Creamy Peanut Butter
  • 1 teaspoon Vanilla
  • 1 cup Chocolate Chips

Preparation

Preheat oven to 350ºF.

In a small mixing bowl, combine flours, baking soda, baking powder, salt, and cinnamon. Whisk to combine.

In a large mixing bowl, whisk eggs and sugar. Add mashed bananas, yogurt, peanut butter, and vanilla. Whisk until combined.

Gently fold wet and dry ingredients together, just until just combined. Gently fold in chocolate chips (reserve some for topping if desired).

Pour batter into loaf pan covered with parchment and smooth. Sprinkle on additional chocolate chips if desired.

Bake 50–55 minutes. Remove from oven and cool on a rack for 5 minutes. Remove loaf from pan and let cool.
