A perfectly flavored and light brunch scone.
Preheat oven to 350 F. In a large bowl, mix together the dry ingredients (flour through baking powder). Next, add the egg and vanilla extract and mix until well incorporated. Then mix in the honey. Once all the ingredients are well incorporated mix in the chopped dried apricots.
Scoop out the dough and place on a non-stick baking spray coated baking sheet. Form it into a disk and cut into 8 triangles. Sprinkle the top with a little bit of coconut sugar. Bake at 350 F for 20-25 minutes until golden brown.
