Description

These are regular blueberry oatmeal muffins, only with soy milk – because I do not eat dairy.

Ingredients

  • 1 cup Soy Milk, Plain
  • 1 teaspoon Cider Vinegar
  • 1 cup Regular (not Quick Cooking) Oats
  • 1 whole Egg
  • ½ cups Brown Sugar
  • ½ cups Canola Oil
  • 1 cup Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1-½ cup Fresh Blueberries

Preparation

Combine soy milk and vinegar in a large bowl. Add oats. Let stand one hour.

After an hour, add egg, sugar, and oil, stirring well.

Combine dry ingredients in a medium bowl; add to oats mixture, and stir until just moistened. Fold in blueberries.

Spoon into greased muffin tins (12 count), filling 3/4 full. Bake at 400˚F for 12-15 minutes.

SO YUMMY! These muffins were absolutely delicious and so moist! I will be making them often!

A couple of minor changes – I used Quick Cooking oats (all I had) and only soaked them in the milk mixture for 30 minutes. I also added about 1/2 tsp cinnamon and 1/2 tsp vanilla.
