Description

A tastes of fall all combined into one delicious slice of bread.

Ingredients

  • FOR THE BREAD:
  • 1 cup Vegetable Shortening
  • 3 cups Sugar
  • 4  Large Eggs
  • 2 cups Pureed Sweet Potatoes
  • 3-½ cups All-purpose Flour
  • 2 teaspoons Baking Soda
  • 2 teaspoons Baking Powder
  • 1-½ teaspoon Cinnamon
  • 1 teaspoon Salt
  • ½ teaspoons Ground Cloves
  • ½ cups Milk
  • FOR THE MAPLE GLAZE:
  • 1 cup Confectioners Sugar
  • ½ cups Pure Maple Syrup

Preparation

Preheat oven to 350ºF. Grease two 9”x5” loaf pans and set aside.

For the bread, using an electric mixer on low speed, cream together shortening, sugar, eggs and sweet potatoes. Sift flour, baking soda, baking powder, cinnamon, salt and cloves. Gradually add flour mixture to the sweet potato mixture, alternating with milk until all combined. Pour equal amounts into loaf pans.

Bake for 55-60 minutes until a tester inserted in the center comes out clean.

Cool on a wire rack in the loaf pan until cool. Run a butter knife around the side of the loaf pan; turn upside down to remove the loaf. Set on the wire rack to continue to cool.

For the glaze, stir confectioner’s sugar and maple syrup until creamy. Drizzle over loaves and let dry. (You may cut the glaze recipe in half if desired.)

Notes:
To prepare sweet potatoes, peel sweet potatoes and cut into large wedges. Lightly toss in vegetable oil and salt and place on a baking sheet. Cook in a 400ºF oven for 20-25 minutes, turning halfway until tender. Remove and let cool. Put wedges in a food processor and blend until smooth.

Sounds delicious! Love sweet potato everything! Could this recipe be made with canola oil instead of shortening? May do some experimenting later.

The bread came out wonderful! There was plenty for me to bring some in to share with co-workers. They all thought it was very good. I have some dear friends who make their own pure maple syrup and gave me a jar of the Maple Butter they make. I used that with the powered sugar for the glaze. Oh my, so good!

Delicious! Followed the recipe exactly and it turned out great. Makes two large loaves which is a bit much for my family so next time I will half the recipe.

Just made this – delicious! A great substitute for the ho-hum, totally-been-done banana bread that ends up at holiday get togethers. This recipe works for 1 loaf + 1 dozen cupcakes. Bake the cupcakes for 18-20 minutes.
