Description

These easy low carb and keto scones are made savory with the addition of delicious bacon. They go perfectly with your favorite soup or as a snack.

Ingredients

  • 3 cups Almond Flour
  • 1-½ teaspoon Baking Soda
  • ½ teaspoons Kosher Salt
  • 4 Tablespoons Cold Butter, Cut Into Cubes
  • 2  Eggs
  • 1 Tablespoon Apple Cider Vinegarr
  • 2 Tablespoons Bacon Grease
  • 8 slices Bacon, Diced And Cooked Until Crisp

Preparation

Preheat oven to 350ºF and line a baking sheet with parchment paper or a baking mat.

In a large bowl, mix almond flour, baking soda, and kosher salt. Add cold butter and use your hands, forks, or a pastry cutter to incorporate the butter into the almond flour.

In a separate small bowl, beat eggs vinegar, and bacon grease.

Pour the dry ingredients out onto your work surface and make a well in the center. Pour the egg mixture in the well and mix gently. Add bacon and combine ingredients with your hands.

Form dough into a flat disk about 1 inch thick. Cut into 6 triangles and arrange onto the baking sheet.

Bake for 20–25 minutes or when a toothpick comes out clean. Cool before serving.

Nutrition per scone: 510 calories, 46g fat, 11g sat fat, 12g carbs, 6g fiber, 18g protein

Notes:
• This made 6 large scones. If you want to make 12 smaller scones, first divide your finished dough into 2 equal portions, then form each one into a flat disc. Cut each disc into 6 equal portions and bake for 15 minutes.
• Nutrition for smaller scones: 255 calories, 23g fat, 5g sat fat, 6g carbs, 3g fiber, 9g protein
