Description

Light and yummy scones with a touch of eggnog flavor, perfect for Christmas morning … or any morning.

Ingredients

  • 2 cups Flour
  • 3 Tablespoons Sugar
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Ground Nutmeg, Or More To Taste
  • ¼ teaspoons Salt
  • ½ cups Salted Butter, Cold, Cut Up Into Small Pieces
  • ¾ cups Eggnog
  • ½ teaspoons Vanilla Extract
  • _____
  • FOR THE GLAZE (optional):
  • ½ cups Powdered Sugar
  • 2 Tablespoons Eggnog

Preparation

Preheat oven to 400 degrees and grease a cookie sheet.

Combine first 6 ingredients (flour, sugar, baking powder, baking soda, nutmeg, salt) in a bowl. Cut in butter with a pastry blender until it resembles coarse meal. Add eggnog and vanilla, stirring until all ingredients are moist, but don’t over blend.

Turn dough onto a floured surface and pat into a circle until about 1/2 inch thick. Either cut into wedges (a pizza cutter works great!) for big scones or use a small juice glass or cookie cutter to cut out smaller scones. Makes about 20 medium-sized scones, or many more small ones.

Place 1/2 inch apart on the lightly greased cookie sheet. Bake at 400 degrees for 12-15 minutes until edges are lightly browned.

Dust with nutmeg or powdered sugar. Or you can make a glaze with powdered sugar and eggnog. Yummy!

Delicious and easy! These had a nice texture, not too cakes or flaky, but just right.
