Description

Cranberry muffins made with applesauce and pecans.

Ingredients

  • 1 cup Cranberries, Chopped (Fresh Or Frozen)
  • ½ cups Sugar, Plus Optional 2 Tablespoons For The Cranberries
  • 1-¼ cup Applesauce
  • ¼ cups Canola Oil
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • 2 cups Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • ½ teaspoons Salt
  • ½ cups Pecans, Chopped

Preparation

Preheat oven to 350ºF. Prepare 12 muffin cups. Combine chopped berries with 2 tablespoons sugar, if desired. Set aside.

Combine applesauce, oil, egg, and vanilla in a small bowl. In a separate bowl combine flour, remaining 1/2 cup sugar, baking soda, cinnamon and salt. Add applesauce mixture and stir until just combined. Fold in the cranberries and nuts.

Bake for 15-20 minutes until an inserted tester comes out clean. Cool for a few minutes before removing from the pan.

These were easy & delicious! My husband will not eat nuts so I substituted white chocolate chips for the pecans. Yummy!
