Description

Moist chocolate zucchini bread with chocolate chips in the mix. My kids didn’t know there was zucchini in this bread until they were teenagers! This recipe yields 2 loaves.

Ingredients

  • 3 whole Eggs
  • 1 cup Vegetable Oil (or 1 Cup Applesauce)
  • 2 cups Granulated Sugar
  • 1 Tablespoon Vanilla
  • 2 cups Shredded Zucchini (You Don\'t Have To Peel Them)
  • 2-½ cups All-purpose Flour
  • ½ cups Baking Cocoa
  • 1 teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • ¼ teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • Handful Chocolate Chips Or Mini Chips

Preparation

In a mixing bowl, beat eggs, oil, sugar and vanilla. Stir in zucchini. Combine all the dry ingredients and add it to the zucchini mixture. Mix well. Pour into 2 greased loaf pans, or make muffins by filling the pans 2/3 full with batter.

Bake loaf pans at 350F for 1 hour or until bread tests done. Bake muffins at 350F for 15 minutes or until they test done.

Very yummy! Next time I will lessen the amount of cinnamon because I think it overpowers a bit. The chocolate chips are a must! Excellent.

I just made this today and absolutely love it! My roommate even loves it, and she doesn’t eat “weird” food. I did add in about a cup of chopped walnuts to the recipe, but I know it’d be just as good without. Also, I made this all in one large loaf pan, so I had to add 10 minutes of cooking time, but the texture was unaffected. I highly recommend this recipe! Thanks cuttingedge!

I just made these into muffins and my son said that these are the best muffins that he has ever had. They are delicious. I used half applesauce, half oil to cut the calories just a bit.

Very yummy! Used coconut oil for the veg oil, put a couple of handfuls of chocolate chips, but could have probably added more. Made 4 mini loaves & a skinny regular sized loaf. The kids loved it, and didn’t notice the zucchini at all! :) Thanks for a great recipe!

Made a double batch of this for farmer’s market. Had to try a mini loaf before I could sell them. My mom, dad, and I agree that it is the best zucchini bread recipe I have ever made! Thank you for posting such a tasty recipe to Tasty Kitchen!
