These chocolate chip bran muffins get two thumbs up from little and big bellies alike. They’re moist and dense, like a good muffin should be, and speckled with semi-sweet chocolate chips.
In a large mixing bowl, combine bran, flour, sugar, salt, baking powder, baking soda, and cinnamon.
In a medium mixing bowl, beat egg with oil, milk, and vanilla. Pour egg mixture into dry ingredients and stir until well combined.
Using 1/4 cup, spoon into prepared muffin tins (either well greased or lined with muffin papers).
Bake at 400ºF for 20–25 minutes, or until a toothpick inserted comes out clean. Enjoy!
