Description

So good served warm with stew or soup! Not too spicy!

Ingredients

  • 2-½ cups All-purpose Flour
  • 2 Tablespoons Granulated Sugar
  • 1-½ teaspoon Baking Powder
  • ¼ teaspoons Salt
  • ½ cups Butter, Cut In Small Cubes
  • ½ cups Old Cheddar Cheese, Shredded Plus Extra For Sprinkling
  • 1 whole Jalapeno, Seeds Removed, Finely Minced
  • 1 cup Buttermilk

Preparation

Preheat oven to 350 degrees (F).

Mix dry ingredients in a large bowl. Cut in cold butter cubes and mix until it resembles coarse crumbs. Mix in cheese and jalapeno. Then add buttermilk and blend until dry ingredients are moistened but do not over mix!

Divide dough between 12 greased muffin tins. Sprinkle tops with a little grated cheese.

Bake for 25 minutes or until lightly browned.
